Ice cream, gelato and sorbet may appear similar at first glance, but they differ considerably in ingredients, texture, flavour and nutritional content. Understanding these differences can help you choose the right frozen treat for your taste and health goals.
What Is Ice Cream?
Ice cream is produced from a combination of milk, cream, sugar and flavourings that is churned and frozen to achieve a smooth, creamy consistency. According to the Ice Cream Alliance, the earliest known version of ice cream dates back to China's Tang Dynasty (AD 618–907). It was made by heating and fermenting buffalo, cow and goat milk, then mixing it with flour to thicken it and camphor for flavour before chilling and serving.
What Is Gelato?
Crafted with milk, cream and sugar, gelato is comparable to ice cream but typically contains more milk, less cream and frequently no eggs whatsoever. Originating in Italy, it is churned more slowly, resulting in a denser, silkier consistency. An expert at Erudus mentioned: "Gelato is more likely to be artisanally produced (as opposed to mass produced) than ice cream, especially in Italy, and this often results in a higher quality product. Flavours come through more intensely in gelato – a chocolate gelato will taste more chocolatey than chocolate ice cream."
What Is Sorbet?
Crafted from fruit juice or purée, water and sugar, sorbet is a dairy-free frozen treat renowned for its vibrant, refreshing flavour. Its concentrated texture and powerful fruit taste also make it a favoured palate cleanser between courses.
Which Option Is Healthier?
Dairy ice creams are excellent to consume in moderation as they are rich in nutrients such as calcium, potassium, phosphorus, iodine, vitamin A, and riboflavin. Nevertheless, according to Masterclass, ice cream generally contains the highest level of milk fat among frozen desserts, typically ranging from 14% to 25%.
Gelato has a lower fat content, usually between 4% and 9%, because it is made with more milk than cream. This dessert is lighter than ice cream but richer than sorbet.
Of the three options, sorbet is virtually fat-free because it is prepared without dairy or cream. However, it frequently contains more sugar than both ice cream and gelato. A food specialist at the Healthy Food Guide acknowledged: "Because [sorbet] contains little other than water, sugar and some form of fruit, sorbet tends to be much lower in calories and fat than ice cream. But, with the exception of vitamin C, it also tends to be low in nutrients."
They concluded: "[It] is not clear-cut. It depends on what your health goals are. If weight loss, cutting calories, and a healthier heart are your aims, it makes sense to choose sorbet. But ice cream is more nutritious, with higher levels of some vitamins and minerals (although a small glass of skimmed milk will give you good amounts of these, minus the fat and sugar). Both are high in free sugars, so eat them only as an occasional treat."
