It turns out that carrots are the principal ingredient of any tomato sauce. Candace noted for Simply Recipes: "From her, I learned how to properly cook pasta and make a soffritto, the classic base of diced onion, celery, and carrot used in pasta sauces." That is why it is not surprising that while many tomato sauce recipes begin with garlic and onion, it is the carrot that many Italians never skip.

How to Use Carrots in Sauce

The optimal method to introduce carrots into a sauce is to dice them and sauté them together with ingredients such as onions and celery before the tomatoes are added to the pan. To give the sauce an extra surge of sweetness, Candace suggests adding a whole peeled carrot, allowing it to cook gently in the sauce while preparing.

Chef and cookbook author Domenica Marchetti explains that carrots are so effective in tomato sauce because they help counterbalance the acidity of the tomatoes. While some tomato sauce recipes call for sugar, carrots provide a naturally sweeter alternative without making the sauce overly cloying. Carrots also complement fresh herbs such as basil, contributing a sweet licorice flavor and aroma to the sauce.
