Egg Salad Upgrade: Add Maple Syrup for a Sweet Twist
Egg Salad Upgrade: Add Maple Syrup for Sweetness

Egg salad sandwiches get a sweet upgrade with a surprising ingredient: maple syrup. Food writer Kat Lieu shared her mother's secret on Simply Recipes, revealing that a touch of maple syrup makes the classic filling memorable.

A Sweet Family Secret

Kat Lieu, a recipe developer, explained that her mother would sometimes sweeten egg salad with diced persimmons, pears, green grapes, or apples. But it was maple syrup that made her egg salad so memorable. She wrote, "Sometimes, Mom would sweeten her egg salad and add crunch with diced persimmons, pears, green grapes, or apples, but it was maple syrup that made her egg salad so memorable."

Why Maple Syrup Works

The sweetness sets this Asian-style egg salad apart from Western versions, though it still includes familiar ingredients like egg yolks, egg whites, and mayonnaise. Kat recommends Kewpie mayonnaise over Hellman's or Heinz. Kewpie mayo, which costs about £5 at most supermarkets, is made with only egg yolks and a special vinegar blend.

  1. Mash the egg yolks and mix with mayonnaise, maple syrup, salt, and white pepper. For every two tablespoons of mayo, add one tablespoon of maple syrup.
  2. Mix until creamy yellow, similar to devilled eggs.
  3. Finely dice the egg whites and toss into the mixture. Stir until combined.
  4. Spread onto untoasted milk bread, though white bread or sourdough works too. Top with another slice and serve immediately.
