The dish, which combines sausages, new potatoes, red onion, and pesto, is designed to be simple, speedy, and delicious — ideal for busy weeknights, especially during summer.

Ingredients and Preparation

The recipe serves four people and requires minimal preparation. Ingredients include a bag of new potatoes, four peeled garlic cloves, eight sausages, one largely chopped red onion, a glug of olive oil, three tablespoons of pesto, 200g of frozen peas, and salt and pepper for seasoning.

Preheat the oven to 220°C (200°C fan). Boil the new potatoes in a saucepan of water for 10 minutes, then drain and transfer to a large roasting dish. Gently flatten each potato with the bottom of a drinking glass. Add the red onion, garlic, and sausages, ensuring space for everything. O'Hare notes she gives her sausages a five-minute head start in the air fryer, though this step is optional.

Cooking Instructions

Drizzle the ingredients with oil and season with salt and pepper. Roast in the oven for approximately 35 minutes, until the sausages are cooked through and the potatoes are golden and crispy. Remove the tray, stir in the frozen peas and pesto, combine thoroughly, and return to the oven for another five minutes until the peas are fully cooked.

“The sausages are succulent, while the new potatoes turn crispy after being flattened before roasting,” O'Hare said. “It's a family favourite that appeals to everyone and provides an excellent way to incorporate plenty of vegetables into a single dish.”

The traybake requires only one dish, and the oven does most of the work, freeing up time for other tasks. Since discovering this recipe a few years ago, O'Hare says it has become a dependable evening meal. “It's remarkably easy to slip into the habit of rotating through the same handful of dishes,” she added, but this traybake delivers impressive results with minimal effort.
