Foodie content creator John Gregory-Smith has shared a quick and easy no-churn ice cream recipe that requires just three ingredients and no special equipment. The recipe serves six to eight people and is fully customisable.

Simple Base, Endless Possibilities

The base uses only double cream and condensed milk. According to John, the sugar in the condensed milk prevents ice crystals from forming during freezing, resulting in a smooth texture. 'You end up with a really smooth ice cream. It's incredibly easy and tastes so good,' he said.

To the mixture, he adds smashed pieces of Cadbury Crunchie chocolate bars, but any favourite chocolate bar, fruit, or biscuit can be substituted. For a simpler version, add vanilla extract.

Ingredients and Method

Ingredients:

  • 600ml double cream
  • 300ml condensed milk
  • Four Crunchie bars, smashed into rubble

Method:

  1. Whisk the double cream and condensed milk into soft peaks.
  2. Add the Crunchie bars and stir together.
  3. Pour into a non-stick loaf tin or Tupperware box.
  4. Freeze for about six to eight hours or overnight until set.
  5. Serve immediately.

Raspberry Ripple Variation

For a fancier option, John also offers a raspberry ripple ice cream recipe. Start with the same cream and condensed milk base, but swap the Crunchie for 200g raspberries and two tablespoons of rose water. Then, press another 300g of raspberries through a sieve to collect the juice. Fold half the juice into the cream mixture, pour into a loaf tin, and spoon the remaining juice over the top to create a ripple. Freeze for six hours or overnight and serve with crushed meringues.

Alternative: Strawberry Granita

If ice cream isn't preferred, the team at Gelupo in London shared a three-ingredient Strawberry Granita recipe. Makes about 800ml (serves 4–6). Ingredients: 500g frozen strawberries, 250ml chilled water, 100g caster sugar. Optional: 150ml whipping cream whipped with 1 tablespoon caster sugar. Method: Chill serving glasses for at least 20 minutes. Blend frozen strawberries, water, and sugar to a slushy consistency. Serve immediately in frozen glasses, topped with sweetened whipped cream if desired.
