Crispy BBQ Chicken: 6 Ingredients for Weekend Meal

BBQ chicken is popular worldwide, but styles vary by region. This version combines smoky notes with sweetness from agave nectar and a slightly charred, caramelised exterior for extra crunch.

Ingredients

For the chicken: 500g chicken breast cut into 3-inch strips, 60g coconut flour, a generous helping of harissa, ½ tsp garlic granules (to taste), ¼ tsp chilli flakes, and black pepper.

For the avocado salsa: avocado, juice of 1 lime, tomato, agave nectar, chilli flakes, sea salt, black pepper, and chopped coriander.

For the BBQ sauce: coconut oil, shallot, crushed garlic cloves, sea salt, black pepper, tomato puree, vinegar, Dijon mustard, water, agave nectar, and tamari sauce.

Method

Preheat the oven to 400°F (gas mark 6, 200°C, 180°C fan-assisted) and line a baking tray with parchment paper.

To make the salsa, roughly mash the avocado with lime juice, add tomato, agave nectar, chilli flakes, sea salt, black pepper, and mix. Check seasoning, then add chopped coriander and lightly combine.

For the chicken, combine coconut flour with harissa, garlic granules, chilli flakes, and black pepper in a large bowl. Dip chicken strips into the seasoned flour and place on the baking tray. Bake for 14 minutes, turning halfway.

While the chicken bakes, make the BBQ sauce. Add coconut oil to a frying pan with shallot and sauté until soft. Add crushed garlic, salt, pepper, and tomato puree. Stir in vinegar, Dijon mustard, and water. Add agave nectar and tamari sauce, stir for 2-3 minutes, then set aside to cool.

Remove chicken from the oven and dip each piece into the cooled BBQ sauce. You can marinate it or cook on the BBQ straight away for 3 minutes per side. Serve with avocado salsa on the side. BBQ chicken is commonly served with coleslaw, corn on the cob, potato salad, mac and cheese, chips, grilled vegetables, or a fresh salad.
