Home cook Laura Nightingale has shared her recipe for feta, tomato and cheese bread, using an ingredient many might not consider for baking: cottage cheese.
The Two-Ingredient Dough
In a TikTok video, Nightingale explained that cottage cheese and flour can be combined to make homemade bread. She said: "The cottage cheese mistake everyone is making is not putting it with flour - because those two ingredients can make bread. That's right, you can make homemade bread with just two ingredients - and add any extra flavours you fancy."
For her version, Nightingale added chopped tomatoes and basil to the flour and cottage cheese, mixing until the ingredients clumped together and formed a dough. She then floured her work surface, placed the dough on it, and shaped it into a boule.
Cooking the Bread
"Once you get the boule-shape, you can score it on top with a sharp knife then cook it in the air fryer or the oven until you get a lovely, crunchy and crispy edge - and a soft and fluffy middle," she said. She recommended air frying at 180C for 20 minutes or oven baking at 180C for 35 minutes. If the bread is not cooked in the middle, she advised turning it over and cooking for a further 3-5 minutes without baking paper underneath.
Showcasing her finished product, Nightingale tore open the bread and said: "It tastes absolutely delicious. It's lovely on its own or with butter and you can cook it whenever you fancy because it's a small little loaf and perfect for one or two people."

In the caption, Nightingale detailed the ingredients: 3 heaped tbsp (60g) self-raising flour (or plain/all-purpose + 1/2 tsp baking powder), 2 tbsp (50g) cottage cheese, 1 tbsp chopped feta, 1 tbsp tomato, and 1 tsp basil.
