Chef Charles Kim, known as Chef Fatty on TikTok, has revealed a simple technique to keep lettuce fresh for up to one month. The method involves loosely wrapping the lettuce in aluminium foil, a common kitchen item.
The tin foil method
In a video from May, Chef Fatty demonstrated the technique, saying: “Did you know this lettuce is almost four weeks old? Here’s my secret to keeping lettuce fresher longer.” He advised washing the lettuce if dirty, ensuring it is fully dry before wrapping, and removing any yellow or rotting leaves.
He explained: “Aluminium foil works because it’s loosely packed, allowing for gases and moisture to escape. It’s also not see through, which means light can’t enter it.”
Expert testing
The food experts at All Recipes tested various storage methods for lettuce, noting that sealed bags or containers can either “choke” or dry out the vegetable. Michael Nestrud, who has a PhD in Food and Sensory Science and a culinary degree from the Culinary Institute of America, told All Recipes: “The biggest issue that happens with lettuce is that it either dries out or it gets wilted. Sealing in a Ziploc chokes it because it needs CO2 to live, and the Ziploc will eventually have only oxygen. Leaving it open in your fridge with no cover will dry it out.”
The experts compared wrapping a head of lettuce in tin foil versus leaving another in a plastic bag. They found that the romaine heart in its original packaging lasted only about two to three weeks with significant trimming needed, while the foil-wrapped heart lasted beyond 30 days. They noted: “Every time you take a layer of lettuce off the heart, the 30 days practically restarts. So, each layer of lettuce is getting a full life in your fridge.”
Why it works
While there is no specific scientific explanation for why tin foil works, it allows the lettuce to breathe more than a sealed container. Nestrud added: “Aluminium does not, on its own, have any specific synergies with lettuce. If it’s protective, it’s either protecting it from drying out or it has just the right permeability to allow the lettuce to breathe without drying it out (aluminium foil IS permeable).”
