Chef's foil hack keeps lettuce fresh for weeks

A chef has shared a simple method to keep lettuce fresh for 'weeks longer' by wrapping it in aluminium foil, a common kitchen staple.

Chef's simple storage trick

Most people buy fresh fruit and vegetables to boost their intake of vitamins, minerals, and fibre, but consuming them before they spoil can be difficult. A whole head of lettuce may be pushed to the back of the fridge until it turns brown and limp. Pre-chopped bags of lettuce have an even shorter shelf life and can deteriorate within days.

By dedicating an extra minute to preparing lettuce for storage, its shelf life can be extended to as long as four weeks using aluminium foil.

Chef Charles Kim, known on social media as 'Chef Fatty', demonstrated the trick. 'Hey, don't forget to wrap your lettuce in aluminium foil, because this will keep out the negative energy,' he joked. He explained that wrapping a whole head of lettuce in foil allows it to remain fresh for 'up to four weeks in the fridge'.

How aluminium foil works

'Now, there's a bit of science to this,' Kim said. Lettuce deteriorates when exposed to ethylene gas, which is released by other items in the fridge as they go bad. It also degrades more quickly with excessive moisture or light.

Wrapping lettuce in foil offers protection. Kim said: 'It protects it from the gas quite a bit. Protects it from moisture by allowing some gases to escape and blocks the light.'

This technique works for other low-acid vegetables, including celery, broccoli, cucumbers, and courgette. However, it is recommended to avoid using foil on tomatoes or citrus fruits, as the acid reacts with aluminium and causes pitting or a metallic taste. Vegetables should be washed and thoroughly dried before wrapping to prevent mould growth.

Reaction from viewers

People praised the tip. One person commented: 'What was the point of going to school if this isn't what I learned.' Another shared: 'It truly works so well. It's actually mind blowing. I had many heads of lettuce last easily four weeks if not longer since I started doing this.' A third person wrote: 'I wrap mine in paper towels, then put them in a plastic baggie and remove the air. Lasts forever.'
