Adding one tablespoon of Worcestershire sauce makes baked beans tastier and richer, according to chef Carol Borchardt. The condiment adds layers of umami and savoury flavour to the dish.

Why Worcestershire sauce works

Worcestershire sauce contains ingredients such as vinegar, onion, garlic, anchovies, tamarind, salt, and sugar, though the exact mix varies by brand. When added to baked beans, these flavours work together, so each ingredient does not need to be used separately.

The sauce balances the tanginess of tomatoes and the richness of brown sugar, which are common additions to baked beans. Only a small amount is needed; one tablespoon works perfectly, but any more makes the beans taste too salty.

How to add the sauce

Heating the beans in a pan on the stove rather than in the microwave allows the sauce to thicken and the beans to soften. The beans are heated for about two to three minutes before the Worcestershire sauce is added. A small tin of baked beans works well with one tablespoon of sauce, but it is suggested to add a little at a time and taste as you go.

After adding the sauce, the beans are left on a simmering heat for about five minutes. For a smokier flavour, a teaspoon of paprika or a couple of rashers of smoked bacon can be added.
