Avocado toast has become a firm favourite on breakfast and brunch menus around the world. The classic combination is made by spreading mashed or sliced avocado over toasted bread, often finished with a pinch of salt and pepper or a drizzle of olive oil.

Avocados are packed with nutrients, providing a source of heart-friendly monounsaturated fats, fibre and potassium, as well as a range of vitamins and minerals. Choosing wholegrain, seeded or sourdough bread can add extra fibre and texture to the dish.

What you need for the recipe

The recipe calls for one can of peach slices in juice (drained), one medium avocado, 10 cherry tomatoes, five basil leaves, half a lime, salt and pepper to taste, one tablespoon of olive oil, one tablespoon of balsamic vinegar and four slices of sourdough bread.

To prepare the dish, finely slice the basil leaves and cut the cherry tomatoes in half. Add the basil (setting a few slices aside for garnish), tomatoes, peach slices, balsamic vinegar and a drizzle of olive oil into a bowl and mix with a spoon. Season with salt and pepper to taste.

How to assemble the toast

Cut the avocados in half, remove the pit, scoop the flesh onto a plate and mash with a fork. Add a few drops of lime juice, season with salt and pepper to taste and then stir. Toast the bread slices and assemble. Add the avocado cream first and top with the peach slices and tomato mix. Finish with finely sliced basil leaves to serve.
