Chef Carina of Recipes by Carina has shared a three-ingredient scone recipe that promises the “easiest and fluffiest scones you will ever make.” The secret? Fizzy lemonade, like Sprite or 7UP, which gives the scones their light texture without any lemon flavor.
How It Works
Traditional scones require rubbing cold butter into flour, but this method skips butter entirely. Instead, self-raising flour is combined with double cream and carbonated lemonade. The cream coats the flour just like butter, while the bubbles from the lemonade create a light, airy crumb.
If you don't have lemonade, sparkling water with a few tablespoons of sugar works as a substitute. Still water won't do—the fizz is essential for the scones to rise properly.
Lighter Options and Ingredients
For a lighter version, swap the cream for full-fat Greek yogurt or buttermilk, though the scones will be less rich. The recipe makes 12 scones with 500g self-raising flour, 300ml double cream, and 300ml carbonated lemonade.
Method
Preheat the oven to 220C/200C Fan/Gas Mark 7 and line a baking tray. Mix the flour, cream, and lemonade with a wooden spoon until just combined—don't overmix. Turn the dough onto a floured surface, shape into a rectangle about 4cm thick, and cut into scones. Brush with milk and bake for 20-25 minutes until golden brown.
Cool before serving. To keep scones fresh, wrap in a tea towel. Leftovers can be stored in an airtight container at room temperature for up to two days and revived in the oven or microwave.
