Tinned Tomato Soup Upgrade: Add Vodka Before Simmering

Adding a splash of vodka to tinned tomato soup, along with a few other ingredients, can significantly enhance its flavour. A foodie has shared an easy method for elevating the readymade meal, which involves simmering the alcohol to extract the tomatoes' natural sweetness.

Foodie's Simple Trick for Tinned Soup

In a TikTok video, foodie Katie Leonard demonstrated how to make tinned tomato soup “more delicious.” She described the soup as “warm, rich and comforting” but noted that “for tins made tasty, it's all about adding a little twist.” Her suggestions include a splash of cream, a herby kick, or a cheesy topping, before recommending the addition of alcohol.

“Heat the soup in a pan, stir in the vodka and let it cook for two minutes. Add your cream and oregano and mix well to combine. Then stir in your Parmesan,” she said.

How to Make the Vodka Tomato Soup

The recipe calls for one tin of tomato soup, one to two tablespoons of vodka, 150–250ml of water or stock, two to four tablespoons of double cream, 25–40g of grated Parmesan, one tablespoon of butter or olive oil, and optional garlic, chilli flakes, black pepper, basil, or dried oregano.

First, heat the butter or oil in a saucepan and sizzle the garlic and chilli flakes for 30–60 seconds. Pour in the vodka and let it bubble for about one minute to cook off the harsh alcohol notes. Then add the soup and water or stock, stir well, and simmer gently for two to three minutes.

Why Vodka Enhances the Flavour

After simmering, turn the heat to low and stir in the cream, then add the Parmesan a handful at a time until melted. Keep the soup at a gentle heat to prevent splitting, then season and serve with extra Parmesan on top.

The vodka works by extracting and intensifying the natural sweetness of the tomatoes, while adding a subtle sharpness that balances the soup. For an alcohol-free version, chopped fresh herbs such as basil or parsley, or store-cupboard seasonings like cracked black pepper, Italian seasoning, or oregano, can also boost the tomato flavour.
