Pastille Bakery, named one of Britain's best bakeries, has issued a light-hearted apology to the wife of UFC star Paddy "The Baddy" Pimblett after his post-fight visit. The 31-year-old lightweight contender visited the Liverpool bakery following his win at UFC 329 over Benoit Saint-Denis, his first victory after a loss to Justin Gaethje in January.
Bakery's Joking Apology
Posting on Instagram, the bakery team wrote: "Soooo, a thing happened today! Fresh off the back of his win this weekend @ufcbaddy paid us a little visit with his lovely family to secure some post-fight treats. We just wanna apologise for helping along with the vanishing of his 6 pack @laurapimblett1996x." The post playfully blamed Paddy's wife, Laura, for the indulgence.
A Hidden Gem in Liverpool
Pastille Bakery is tucked away in a warehouse unit on an industrial estate, described as "the epitome of a hidden gem." Founder Jamie Heffey started the business in his home kitchen with help from his partner and mother, selling treats at markets and pop-ups where they consistently sold out. The bakery opened its first permanent venue in 2024 and has since gained a massive following.
Recognition and Redemption
Earlier this year, Pastille Bakery was named among the best bakeries in Britain by the prestigious Good Food Guide, the only Merseyside bakery and one of just three in the North West to make the list. Jamie told the ECHO: "We are blown away. Never did we see this coming. We just keep ourselves busy and try to keep creative and offer our customers something unique and a bit different. We've not even been open two years yet so to be rewarded like this is such an honour."
Jamie Heffey's Journey
Following the inclusion, Jamie publicly shared his past: as a teenager, his choices led to a jail sentence, but he was determined to start a new story. He said: "I learned to cook, spent the next 10 years burning out as a chef, took chances, travelled miles for opportunities, left jobs when they weren't right, drove taxis to pay the bills, cleaned windows, worked 80 hour weeks, woke up at 2am to bake, and built a cake project from the tiny kitchen in my home. There were sacrifices. Leaving my family to learn so that one day I could provide a better life. Starting again more times than I can count."

Despite its off-the-beaten-track location, Pastille Bakery is hugely popular, especially when it announces collaborations with other bakers like Manchester's Finch Bakery or Liverpool's Castro's Cafeteria. The bakery continues to attract high-profile visitors like Paddy Pimblett, cementing its reputation as a must-visit destination.
