Hideaway, the premium experience lounge and club at Co-op Live, has unveiled a brand-new menu curated by Simon Rimmer, and the Spinach & Feta Filo Pie stood out as the clear favourite. The 'reimagined, premium experience' venue opened in 2024, with the Sunday Brunch chef and Manchester restaurateur curating its 'Mediterranean-inspired party retreat' exclusive menu since it opened its doors.
Membership to the club includes tickets to the venue's most coveted seating for all publicly ticketed events in section 103, as well as entry to Hideaway before and after shows. The restaurant and the space's interiors reflect an upscale Mediterranean style, with cosy nooks and plush seating, while the space also features live DJs and performances, aligning with the theme of the event taking place in the main bowl.
New menu launches this month
Launching this month, Rimmer's brand-new menu brings Mediterranean street food with a twist, featuring kebabs and small plates that reimagine pre- and post-show quick bites. The menu reflects Rimmer's signature approach to vibrant, flavour-led cooking, with a mix of meat, seafood and plant-based dishes.
Members will also be able to pre-order a kebab at the restaurant to be waiting for them post-show as the after-party gets underway. The new menu includes Harissa Prawn Skewers with confit garlic, coriander, red chilli and lemon; Labneh & Flatbread with chilli oil, za'atar, pine nuts and mint; Crispy Cauliflower Fritti with muhammara, pomegranate molasses, pumpkin seeds and dill; and Spinach & Feta Filo Pie, combining filo, spinach, feta, pistachio, caramelised onions and Manchester honey.
The menu was found to be the perfect luxury pre-show food, with a great variety of dishes and mixes of flavours that really elevated the concert experience while still being a great meal in its own right. While all of the dishes were delicious, there was a clear stand-out plate from the menu: Rimmer's famous Spinach & Feta Filo Pie.
A Greens restaurant staple
The pie contains golden filo, spinach, feta, pistachio, caramelised onions, honey and malfouf salad, and is the perfect balance of savoury and sweet. A famous staple of Rimmer's beloved Greens restaurant, the pie has now earned its place on the new menu at the luxury venue.
It comes after Rimmer and his business partner Simon Connolly confirmed the closure of their second Greens site in Sale in 2024. The beloved vegetarian restaurant issued a heartbreaking update to confirm that the business was "untenable", and its doors had been closed permanently. The closure of the Stanley Square site came just eight months after the shock closure of the original Greens vegetarian restaurant in West Didsbury. Greens has been trading in Greater Manchester for the past 33 years, and was seen as a trailblazer in the food world for its vegan and vegetarian offerings - including the much-loved Spinach & Feta Filo Pie.
