Will Murray, a chef who honed his skills at Dinner by Heston Blumenthal and co-runs London eateries Fallow, Roe and FOWL, has cooked bacon 20 different ways and named the one technique that delivers "good results every time".
Testing 20 methods
In a video for the Fallow YouTube channel, Murray compared various cooking methods, from traditional frying and grilling to more exotic techniques like blowtorching, flambadou, sous vide and "southern candied".
He said: "In our restaurants, we serve a tonne of bacon. We never actually played around with the best way to cook it. So, today, we're going to try every different way to cook bacon."
Air fryer impresses
Murray admitted he had never cooked bacon in an air fryer before, but was impressed with the results, calling the finished product "absolutely banging" and evenly cooked, though not the most "appealing" shape. He added that the air fryer "rivals any of the bacon techniques or grilling techniques".
Grill wins for ease and consistency
Summing up, Murray referred to the popular method used by Brits: "So, the easiest and quickest is under the grill, and it gives you good results every time. Very consistent."
He also tried the southern candied method with brown sugar and powdered cayenne pepper, calling the kick of heat a "game-changer", but noted it was "a bit of work" and leaves a dirty tray.
