Tinned soup upgrade: Add vodka before heating for richer flavour

A foodie has shared a simple trick for upgrading tinned tomato soup: add a splash of vodka before heating. The alcohol helps cut through the sweetness and creaminess, making the cheap and cheerful dinner taste more balanced and comforting.

The vodka trick for tinned tomato soup

Katie Leonard, who loves amping up tins of tomato soup with a few basic ingredients, recommended the hack in a TikTok video. She advised heating the soup in a pan, stirring in the vodka and letting it cook for two minutes. Then add cream and oregano, mix well, and stir in Parmesan.

“Today we are focusing on a tin of tomato soup. Tomato soup is already a classic. It's warm, rich and comforting,” Katie said. “But, for tins made tasty, it's all about adding a little twist. A splash of cream, a herby kick or a cheesy topping can take it to the next level.”

Why vodka works in tomato soup

Alcohol acts as a solvent for some flavour and aroma compounds that don’t dissolve as well in water. Supporters of the “vodka tomato” idea say a small amount can help unlock extra tomato and herb aromatics, making the soup taste more rounded.

Tomato soup can also read as very acidic or “tinny”. Vodka is said to take the edge off and make the overall flavour feel more balanced, especially if the soup is finished with cream, butter and Parmesan. The combination is already familiar from vodka pasta sauce, so it translates easily to home cooking.

Recipe for vodka tomato soup

Ingredients: 1 tin tomato soup, 150–250ml water or stock (to loosen, to taste), 2–4 tbsp double cream (or single cream/crème fraîche), 25–40g Parmesan finely grated (plus extra to serve), 1 tbsp butter or olive oil, 1 small garlic clove finely grated (optional), a pinch of chilli flakes or black pepper, basil or dried oregano (optional), and an optional lift of 1–2 tsp lemon juice or white wine vinegar added at the end.

Method: Heat the butter or oil in a saucepan over a medium heat. Add garlic or chilli if using and cook for 30–60 seconds until fragrant. Pour in the tinned soup and loosen with a splash of water or stock, then stir and simmer gently for 2–3 minutes. Turn the heat down low and stir in the cream. Add Parmesan a handful at a time, stirring until melted and silky, keeping it on a gentle heat so it doesn’t split. Season with pepper and herbs, and if using, add a tiny squeeze of lemon or a splash of vinegar right at the end. Serve with extra Parmesan on top.
