Nigella Lawson has shared a simple Mexican scrambled eggs recipe that can be made in just a few minutes. The dish, which first appeared in Nigella Express before being published on her website, adds green chilli and crisp tortilla strips to classic scrambled eggs.
A versatile dish for any meal
When sharing the recipe, Nigella explained: "This is not only the best way to start the day, but the best way to end it, too." She added: "You can make it even more of a meal by serving some refried beans alongside, but I love it just as it is. It also happens to be one of the greatest hangover cures around."
She went on: "You know, I'm tempted to consider overdoing it partywise just to have an excuse to whip up a batch of these. But then, they are so good that there is always a reason to eat them; no need to scout around for excuses."

Ingredients and method
This recipe serves two people. Ingredients include two tablespoons of vegetable oil, two soft corn tortillas, one tomato (deseeded and roughly chopped), one spring onion (roughly chopped), one green chilli (deseeded and roughly chopped), four large eggs (beaten), and 1/4 teaspoon of Maldon salt.
To make it, heat the oil in a frying pan, roll the tortillas into a sausage shape, snip them into strips, and drop them directly into the hot oil. Fry until crisp and golden, then transfer to a bowl and set aside. Add the chopped tomato, spring onion, and green chilli to the hot pan, stirring for around a minute. Return the tortilla strips to the pan, add the beaten eggs and salt, and stir as you would for scrambled eggs. Once the eggs have set, take the pan off the heat and keep stirring until cooked to your preference.
