Hundreds of eager customers are forming lengthy queues along a typically tranquil Coogee street, all for a bakery that many might easily overlook. Nestled discreetly within a Woolworths Metro and a local newsagent, Penelope Bakery and Roastery has rapidly emerged as one of Sydney's most sought-after culinary destinations. This modest establishment now attracts daily lines for its cult-favourite cinnamon scrolls, authentic Greek-style coffee, and an array of freshly baked delights.
From Coffee Passion to Food Phenomenon
What began as a heartfelt passion project centred on coffee has transformed into one of Coogee's most buzzed-about food spots. Owner Tina Pil emphasised that the concept was never intended to be just another ordinary bakery. "We are coffee roasters, so our primary inspiration was to sell freshly roasted coffee as a double ristretto with organic milk," she explained. "There was nowhere in the eastern suburbs that offered a proper Greek Freddo cappuccino as it's authentically prepared in Greece, so our goal was to faithfully replicate this experience."
This distinctive approach, bringing genuine Greek flavours to Sydney, has clearly resonated with devoted fans who travel across the city for their unique brew. However, it isn't solely the coffee that keeps patrons returning. The site itself is steeped in history, having housed a different bakery for over three decades before the previous tenants departed. This provided Pil and her team the chance to take over, renovate, and reimagine the space while preserving beloved local staples.
Preserving Local Favourites While Innovating
"We retained some of the Coogee classics like Vegemite knots and flat burger buns that locals are absolutely obsessed with," Pil noted. Then came the now-iconic cinnamon scrolls, which are arguably the primary catalyst behind those persistent daily queues. Served mere hours after baking, these scrolls have cultivated an almost legendary status in a remarkably short time, owing to a meticulous process that commences long before most customers awaken.
"The bakers commence their work at midnight, rolling the dough, baking, and topping everything fresh each and every day," Pil shared. "Nothing is ever held over for the following day; instead, any leftovers are generously donated." It is this unwavering dedication to freshness, coupled with lavish toppings and soft, pillowy dough, that has propelled demand to extraordinary heights, with many customers arriving early to secure their share before supplies run out.
Unexpected Hits and Accessible Pricing
Alongside the celebrated scrolls, the bakery's 'coffee clouds' have also garnered surprising popularity, particularly the pistachio variant, which has emerged as a standout favourite among regulars. Despite soaring demand and escalating costs throughout the hospitality sector, the team has deliberately chosen to maintain affordable pricing. Their coffee remains steadfastly priced at $4.50, even though their double ristretto shots and organic milk incur substantially higher expenses.
"We also refrain from imposing surcharges on special occasions or public holidays," Pil affirmed. "This might not align with conventional business practices, but we reasoned that if we kept our local community content and absorbed some of these costs, we'd stand a better chance of thriving in such a challenging market. Our foremost priority is simply to bring happiness to as many people as possible."
Social Media Acclaim and Royal Recognition
This customer-centric strategy appears to be yielding impressive results, as their social media channels overflow with enthusiastic reviews. Patrons consistently praise everything from the pastries and coffee to the very experience of waiting in line. "Visited a few weeks ago and highly recommend it," one customer wrote. Another added, "The cinnamon scrolls were incredibly soft and utterly delightful." A third remarked, "We adore our paximadi with our coffee," referencing the traditional Greek biscuit also available.
Further testimonials include, "So grateful my partner queued for my pistachio scroll—it was absolutely delicious," and "Totally worth the drive!" from an ardent fan commuting from Western Sydney. The bakery's burgeoning reputation has even transcended the local community. In April, Penelope Bakery was selected as a supplier for an exclusive retreat hosted by Meghan Markle and the Her Best Life podcast at Coogee's newest luxury hotel, the InterContinental.
The team catered their famed cinnamon scrolls and brownies for the event, a milestone that solidified their escalating profile. From a humble corner bakery to a destination attracting hundreds daily, Penelope's success narrative stands as a testament to executing fundamental elements with exceptional excellence. And based on the continually expanding queues, it's evident that Coogee residents are not the only ones willing to patiently wait for a taste.
