This unique wine is slowly fermented using hand-harvested grapes, which are pressed at cool temperatures to preserve bright, vibrant flavours. The result is a wine that wine expert Candace describes as a cross between a kombucha and a traditional wine, with a notably funky nose and a yeasty character reminiscent of a pet nat.
Aroma and Taste Profile
Alongside the funky, fermented notes, the wine offers the classic strawberry and raspberry aromas expected from a summer rosé. On the palate, Candace explains that the finish is exceptionally tart and dry. She warns that this is not a wine for light Provence rosé purists.
