Lettuce is a kitchen essential during the summer months, whether you are throwing together a crisp salad or piling it high on a juicy burger. It can be incredibly frustrating, however, when it begins to wilt or turn soggy before you have had the chance to use it.

Why Lettuce Spoils Quickly

What many people do not realise is that lettuce has a protective outer layer, much like numerous other fruits and vegetables, making it far more vulnerable to spoilage if you simply chuck it straight into the fridge. Unwashed and uncovered lettuce can dry out and wilt, but owing to its high water content, it is also prone to becoming slimy or even mouldy if not stored correctly.

The Simple Solution: Paper Towel and Vinegar Wash

Food expert and author of five cookbooks, Laura Fuentes, says it takes just a few minutes to keep lettuce fresh — all you need to do is give it a quick wash and store it alongside a sheet of kitchen paper.

How to Stop Salads and Lettuce from Going Soggy in the Fridge

Laura said: "You will use a vinegar and water mixture in a salad spinner to mix and spin in order to wash the lettuce. After spinning, let it soak and then rinse thoroughly."

It may seem odd to wash vegetables before you actually need them, but lettuce leaves can harbour bacteria and dirt, which accelerates mould growth considerably.

The Vinegar Wash Method

The white vinegar used in salad dressings contains acetic acid, which possesses antimicrobial properties that eliminate harmful bacteria, helping to keep lettuce fresher for significantly longer.

Simply pour one part white vinegar and three parts cold water into a bowl, then submerge your salad leaves for approximately three minutes. Ensure you leave your lettuce leaves soaking for less than five minutes. They will be thoroughly cleaned within just a couple of minutes, and leaving them any longer risks them taking on a vinegary flavour.

Drying and Storing Lettuce

Next, use a salad spinner to dry the lettuce, but do not worry if you have not got one — simply spread the leaves out on a clean tea towel and pat them dry instead. It is absolutely vital to ensure the lettuce is completely dry before storing it in the fridge, as any remaining moisture will cause it to spoil and reduce its shelf life considerably.

Laura said: "Lay the lettuce leaves out on a clean dish towel until completely dry, then store in a zip bag with a paper towel in the fridge."

Once the lettuce is fully dry, store it in a lidded container with a sheet of kitchen roll to absorb any excess moisture from the leaves. Lettuce has a naturally high water content, which it releases readily, so storing it with a paper towel will keep it fresh and crisp for anywhere between 10 and 14 days.

Additional Tips for Fresher Produce

This follows Aldi's advice to supermarket shoppers buying milk to make a small change to their fridge storage habits to help keep it fresher and last longer. The discount supermarket last year teamed up with food waste expert Kate Hall to help shoppers reduce food waste and save money through simple adjustments at home. The supermarket advised avoiding the fridge door and storing your milk at the back of the fridge, as, according to Aldi, this will keep it fresher for about three days longer. This is because the back of the fridge has the coldest and most consistent temperature, so it helps to slow down bacterial growth, which can cause milk to spoil.
