Microwave Method: Fast and Easy
Chang advocates for cooking bacon in the microwave, calling it a game-changer for bacon lovers. He explains that this approach is faster and safer than pan-frying, eliminating greasy stovetop messes. However, he emphasizes key factors: bacon thickness, quantity, and layering. Thicker cuts and larger amounts require longer cooking times, and the rashers must not overlap to ensure even cooking.
Paper Towels vs. No Paper Towels
Chang opts for streaky bacon placed in a microwave-safe container with a vented lid. While many recommend paper towels, he often avoids them, valuing the rendered bacon grease—what he calls liquid gold—as a versatile kitchen tool for other dishes. For those using paper towels, he suggests laying the bacon on them and adding more on top to absorb grease and prevent splatters.
He cooks the bacon for about six minutes, then lets it rest to crisp up further. In tests, bacon cooked with paper towels emerged crispier due to fat absorption. Chang recommends paper towel-cooked bacon for BLTs, while bacon cooked without paper towels (still slightly pliable) pairs perfectly with eggs or cheeseburgers.
