Ramsay's method involves cracking chilled eggs into a warm, deep-sided saucepan and stirring constantly with cold butter. The pan is taken off the heat intermittently to achieve a custard-like texture.
Once the eggs are soft and creamy, a spoonful of crème fraîche is stirred in, along with salt and optional chives. The technique requires a few minutes of effort but yields superior results.
