When rice cooks, heat and water cause starches, primarily amylose and amylopectin, to swell and seep out of the grains, creating a sticky texture. Introducing a small amount of acid, such as lemon juice or vinegar, reduces the pH of the cooking water. This acidic environment helps stabilise the starch granules, making them less likely to burst and release sticky starch.

The result is fluffier, less sticky rice, as the grains stay more intact and separate during cooking. The chef shared the tip with his TikTok followers, saying: "If your rice is mushy and sticky, something that can help is adding a few drops of lemon juice or vinegar."
