Avocado is a go-to healthy breakfast, but it doesn't have to come with toast. With just two simple ingredients, you can turn it into a satisfying morning meal that's quick to prepare and packed with nutrients.
A Healthier Alternative to Avocado Toast
Avocado is rich in healthy fats and fiber, keeping you fuller for longer. If you're bored of smashed avocado on toast or cutting back on bread, this simple swap delivers the same satisfying breakfast without the carbs.
Recipe developer Paula at Call Me PMc suggests pairing avocado with just two ingredients: Parmesan and lime. This combination creates broiled (grilled) cheesy avocados, a nutrient-rich breakfast that's easy to throw together at home.
Why This Recipe Works
Paul commented: "There are a couple of great things going on here with this avocado side dish! It's healthy, filling, beautiful (we do eat with our eyes first!), and it’s an easy 6 to 8-minute meal or snack."
"I love that you can serve this as a light breakfast or snack or as a side dish. Avocados are versatile and taste good in many different flavours. [Try] different cheeses with this recipe, or even broiling an egg on top."
How to Make It
Ingredients:
- One medium avocado
- One lime, zested and juiced
- Two tablespoons of Parmesan cheese, grated
- Salt to taste
- Pepper to taste
Method:
Begin by preheating the oven or toaster oven to broil (grill) and allowing it to heat fully before preparing the avocado. Carefully slice the avocado in half lengthwise, remove the seed, and place the halves on a heat-safe tray or baking dish.
Squeeze fresh lime juice over the avocado halves. Sprinkle grated Parmesan cheese, lime zest, salt, and freshly ground pepper evenly over the avocado.
Place under the grill and cook for approximately four minutes, or until the Parmesan has melted and become lightly golden. Remove from the oven and serve immediately while warm.
Fans Rave About the Recipe
Fans commented on the website: "Thank you!! I’m eating this at about 15 min after I read the recipe. My new fave!"
Another added: "I knew I was gonna put parm on my avocado for dinner, but it sounded bland. I googled those keywords, found this and am SO happy I tried it. The lime really just adds so much."
Alternative Recipe: Stuffed Avocados
For another filling, healthy quick meal, try stuffed avocados. A culinary expert at Good Food suggested incorporating spicy beans and feta to enhance this green delight.
They said: "This super speedy meal is packed with vegetarian sources of protein - creamy avocados with spicy kidney beans and crumbled cheese."
