Scones are a quintessentially British staple, traditionally topped with jam and cream. Savoury varieties are equally popular, typically loaded with cheese and served warm alongside butter. Tesco Real Food has unveiled a three-ingredient recipe for wonderfully light and fluffy scones.
Quick and Simple Recipe
The recipe notes said: "Rustle up a British classic in no time with this super-simple three-ingredient cheese scone recipe. These little savoury scones are perfect for a teatime treat, packed up in lunchboxes for a picnic." This particular recipe makes 10 scones, though it can easily be halved or doubled depending on your requirements.
Ingredients
- 300g self-raising flour, plus extra for dusting
- 200g mature Cheddar, grated
- 250g low-fat natural yoghurt
Method
- Combine the self-raising flour with 150g of the grated cheese in a large mixing bowl. Next, stir in the low-fat natural yoghurt until the mixture comes together.
- Turn the dough out onto a lightly floured work surface and knead gently a few times until smooth.
- Shape into a round, then roll out with a lightly floured rolling pin to a thickness of 2cm.
- Cut out 10 scones using a 6cm round cutter, re-rolling the trimmings as necessary.
- Place onto a lined baking tray and scatter the remaining 50g of grated mature Cheddar over the scones.
- Bake at 200°C/180°C Fan for 18 minutes, or until the scones are golden and springy to the touch.
- Transfer to a wire rack to cool slightly, then serve warm as they are, or split and spread with butter or fill as desired.
Variations and Tips
Tesco also suggested finely chopping spring onions or chives and folding them through the dough to create delicious cheese-and-onion-flavoured scones. Alternatively, if you're feeling adventurous, a pinch of crushed chillies can be thrown in for a fiery kick.
