To serve two people, start with three medium-sized Maris Piper or King Edward potatoes. Slice them into one-centimetre-thick chips. You may peel the potatoes first if desired, but I recommend leaving the skin on for an added crunch.
Soak the chips in cold water for 30 minutes to remove excess starch, then pat them dry thoroughly with a clean tea towel or kitchen paper. Next, toss the chips in a bowl with one to two teaspoons of oil, a pinch of salt, and any additional seasonings you prefer.
