This dish is designed for convenience, with all ingredients cooked in a single pan to reduce washing up. To achieve crispy salmon skin, pat the fillets dry with kitchen roll and fry for a few minutes on medium heat. The recipe pairs salmon with butter beans, spinach, and a creamy parmesan sauce for a hearty meal.
Ingredients and Method
Ingredients:
- Oil for frying
- Four boneless salmon fillets
- One tsp smoked paprika
- One tbsp oil
- One onion finely chopped
- Two cloves garlic finely chopped
- 400g tin of butter beans drained
- 60g fresh spinach finely chopped
- 10 semi-dried tomatoes (or sun-dried tomatoes from a jar)
- 300ml single cream
- 300ml chicken stock
- 50g fresh grated parmesan
- One tbsp fresh chopped herbs (parsley and rosemary)
- Salt and ground black pepper
Method:
- Prepare vegetables, drain beans, grate cheese, and make chicken stock.
- Warm oil in a large non-stick pan. Pat salmon dry, mix paprika with oil, and brush over salmon.
- Place salmon skin-side down in pan, fry for about three minutes on medium heat until halfway cooked, then flip and fry for two to three more minutes until done. Remove skin if desired.
- Add onion to pan, fry for five minutes until soft, then stir in garlic for the last minute.
- Add butter beans, spinach, tomatoes, cream, and stock. Season with salt and pepper, stir well.
- Bring to a boil, simmer on medium heat for five minutes until thickened. Stir in parmesan and herbs until melted.
