Recipe developer and food writer Laurel Randolph has suggested that adding yoghurt to scrambled eggs can transform the dish, delivering creamy, tender and slightly tart results. Writing for Simply Recipes, she said: "There are dozens of hacks when it comes to scrambled eggs. Some chefs swear by adding a splash of water or milk to your eggs, while others insist upon heavy cream or crème fraîche-and that's just the beginning. I've tried all of the scrambled egg additions, and I've figured out my tried and true favourite: yoghurt."
Why yoghurt works
Yoghurt operates in much the same way as other rich, creamy ingredients such as double cream, crème fraîche, and sour cream, but it is more likely to be readily available in the fridge. Thanks to its dairy fat content, yoghurt can lend an extra layer of creaminess to scrambled eggs, along with a boost of flavour.
Laurel said: "Yogurt's subtle milky tang is the ideal complement to mild eggs." She described dairy as a "failsafe" option when cooking scrambled eggs. As eggs tend to cook rapidly, incorporating the cool yoghurt can help slow down the cooking process and guard against overcooking.
How to make scrambled eggs with yoghurt
Adding the yoghurt halfway through cooking helps guarantee the eggs remain creamy and perfectly done. Dairy-based yoghurts work best, particularly those with a decent fat content. A single spoonful of yoghurt is sufficient for a scramble using two to three eggs.
To make the dish, place a pan over a medium-low heat and add a drop of oil or a knob of butter. Whisk the eggs together in a bowl and season with salt and pepper before tipping them into the pan. Move them around using a rubber spatula every now and then, taking care to ensure the eggs don't catch on the bottom of the pan.
When roughly two-thirds of the eggy liquid has turned solid, add one spoon of plain yoghurt. Continue scraping the pan with the spatula and folding the yoghurt through the eggs. Once the liquid has fully transformed into solids, take the pan off the heat. Some of the eggs may still appear slightly glossy, so there's no need to worry. Serve alongside toast or your favourite breakfast accompaniments.
