According to Tesco, the key factors are air circulation, temperature, and isolation from ethylene-producing produce. Ethylene gas, released by onions and other fruits, accelerates ripening and sprouting.

Tesco states: "Your spuds need air circulation, so don't suffocate them in a plastic bag. They're best kept in a mesh or paper bag. It's also crucial that potatoes are stored away from other fresh produce, particularly onions, as they release ethylene gas."

Optimal Storage Conditions

Potatoes must be kept in a dark place because light triggers photosynthesis, leading to sprouting. The ideal temperature is below 10°C. Suitable locations include a porch cupboard, garden shed, or even the fridge if space allows. Before storing, Tesco recommends a "curing" process: brush off dirt (do not wash, as moisture encourages sprouting), place potatoes on newspaper in a dark spot without touching each other, and leave for two weeks to toughen the skins.

After curing, transfer the potatoes to a paper or mesh bag and store in the chosen cool, dark location. This method can keep potatoes "as fresh as the day you bought them" for up to six months, according to Tesco.
