Adding a block of silken tofu to green goddess dressing creates a "super creamy" texture, according to the chefs at BOSH!. The ingredient also boosts the protein and fibre content of the dressing, making it suitable for both vegetarians and vegans.

Butter beans add extra fibre

The salad itself includes butter beans, which introduce additional fibre to the meal. The recipe was shared on Instagram, where the BOSH! team described the dish as: "Silken tofu and avocado blended into a super creamy, herby dressing and tossed through crisp romaine, cucumber, spring onions and big juicy butter beans. Fresh, satisfying and seriously good."

Recipe for green goddess salad

The recipe serves two to three people. For the dressing, blend 300g of silken tofu, 30g of fresh basil, 50g of baby spinach, one avocado, the juice of two lemons, two tablespoons of apple cider vinegar, one garlic clove, and 25g of nutritional yeast. Blitz until smooth, adding small amounts of ice-cold water to reach the desired consistency, then season with salt.

For the salad, use two spring onions, one cucumber, two romaine lettuce hearts, 700g of butter beans, and four tablespoons of mixed seeds. Drain and rinse the beans, chop the spring onions, slice the cucumber lengthways and remove the seeds before dicing, and shred the lettuce into 1cm strips.

Combine the beans, cucumber, and lettuce in a large bowl, pour over the dressing, toss together, and serve immediately.
