Burgers are a fantastic meal choice, especially during summer barbecues. Homemade versions surpass supermarket options, offering complete control over ingredients. However, achieving a perfectly juicy burger at home remains a culinary challenge. Even following recipes precisely can yield a flavourful but dry patty.
According to food specialist Lily Keeling, senior recipe development manager at Green Chef, a surprising hack can make burgers juicier while adding nutritional value: ground flaxseed.
"Ground flaxseed is probably one of the last ingredients people would consider adding to a burger or meatball mixture," Keeling said. "But flaxseed can absorb and retain several times its weight in moisture, making it perfect for creating a burger that's noticeably juicier."
How to Use Flaxseed in Burgers
Keeling recommends using approximately one to 1.5 tablespoons of ground flaxseed per 500g of mince. A 500g packet typically yields about four burgers. Adding excessive amounts can produce an unusual flavour, so sticking to 1.5 tablespoons is essential.
"The good news is you won't end up with a burger that tastes weird or unusual," Keeling added. "When used in small amounts, the flavour is barely noticeable."
Nutritional Benefits of Flaxseed
Beyond moisture, flaxseed boosts nutritional content. "The real bonus is that you're also adding nutritional value to your burger, with flaxseed providing a source of fibre and plant-based omega-3 fatty acids, which, for such a small addition, is pretty impressive," Keeling said.
Flaxseed is widely available in supermarkets such as Sainsbury's for approximately £2.20 per 200g bag. It can also be used in water, porridge, yoghurt, or smoothies. However, it deteriorates rapidly, so storing it in an airtight container in the fridge is essential to keep it fresh.
