The mushrooms should be soaked in warm water before use, following the packet instructions. Once ready, they should be drained, roughly chopped, and added to the pot while the sauce simmers.

The recipe
The Slimming World recipe calls for 1 onion, 1 pepper, 1 carrot, 120g chestnut mushrooms, 2 garlic cloves, 50g smoked bacon medallions, half a beef stock cube, 5g dried porcini mushrooms, 250g beef mince (5% fat or less), 200g pasta, 1 tsp dried oregano, 2 tbsp tomato purée, and 400g chopped tomatoes.
To prepare, finely dice the onion, pepper, and carrot, quarter the chestnut mushrooms, and crush the garlic. Trim and roughly chop the bacon. Dissolve the stock in 200ml boiled water and add the dried porcini to soak. Fry the bacon in a non-stick pan for two minutes, then add the mince and fry for five minutes until browned. Remove the meat and set aside. Cook the pasta separately. Finely chop the soaked porcini and fry with the vegetables, garlic, and oregano for four to five minutes. Return the meat to the pan, add the tomato purée and cook for one minute. Pour in the stock and chopped tomatoes, season lightly, and simmer for 15 minutes. Stir the pasta through the bolognese and serve.
