Roy emphasises that perfect scrambled eggs require gentle, slow cooking over low heat. Rubbery, chewy curds, like those from hotel buffets, are unappetising. A generous amount of butter is crucial for creaminess — about one tablespoon per three eggs.

While parmesan is a must-have ingredient for flavour, it is not the topping that truly transforms the dish. The real champion is crispy chilli oil.

Using Crispy Chilli Oil

Roy adds the oil into the eggs during cooking and drizzles more over the top once done. She recommends Lao Gan Ma brand, available at Asian supermarkets or in the world foods aisle. “Once you start adding it into your eggs, there really is no going back,” she says.

Recipe for Perfect Scrambled Eggs

Here is Roy’s technique for serving two:

  • Three eggs
  • Tbsp butter
  • Fresh parmesan, grated
  • Two tsp crispy chilli oil
  • Two slices of sourdough bread

Method: Beat the eggs thoroughly. Place a pan over medium heat, add butter, and let it melt until it starts to brown for deeper flavour. Pour in the eggs and immediately remove from heat, stirring constantly to prevent sticking. Return to very low heat once silky and thick, stirring with a silicone spatula. Add parmesan and a dash of chilli oil, reserving crispy bits. When almost cooked, remove from heat — residual heat finishes cooking. Serve on toasted sourdough, drizzled with another teaspoon of chilli oil, including crispy bits.

Impact and Versatility

Roy notes the cooking process takes no more than a couple of minutes, and the eggs should look slightly underdone. She believes every kitchen should have a jar of this condiment, as it also enhances rice and noodle dishes.
