Scrambled Eggs Recipe
Ingredients:
- Knob of butter
- Four eggs, whisked
- 1/8 tsp sea salt
- 1/8 tsp pepper
- Two tbsp chopped chives
- Two tbsp sour cream
- 1/2 cup of sliced bacon (optional)
Method:
Heat butter in a medium or large pan - nonstick is best - over medium-low heat. Pour the eggs into the pan, stirring gently and continuously until curds begin to form. This should take no more than a couple of minutes.
Use a spatula to carefully scramble the eggs, as this will result in a more tender texture, by gradually pushing the larger curds to one side so that the uncooked egg flows onto the pan. This can be done using small circular movements or a figure-of-eight motion.
Once they have just set, remove from the heat and fold in the sour cream and chives, seasoning with salt and pepper to taste.
If you want to add a hint of bacon, cook the rashers first over a medium-high heat until crispy. Spoon away some of the excess fat, leaving a little remaining in the pan, which can then be used in place of butter when cooking the eggs.
