How to Make Satay Beans on Toast

The recipe uses butter beans instead of traditional baked beans. Ingredients include two slices of sourdough, one tin of butter beans, two diced shallots, one tablespoon of tomato paste, one teaspoon of curry powder, one tablespoon of peanut butter, juice of half a lime, one teaspoon of light soy sauce, and one tablespoon of honey. Toppings include peanuts, pickled red onions, and spring onions.

To prepare, heat olive oil in a pan and cook shallots for six minutes until softened. Stir in tomato paste and curry powder, cooking for one to two minutes. Add drained and rinsed butter beans (or jarred beans with their brine) along with two tablespoons of water. Stir in peanut butter, soy sauce, lime juice, and honey, then simmer for a few minutes. Spoon over buttered toast and top with peanuts, pickled onions, and spring onions.
