Crème Fraîche Makes Shepherd's Pie Richer, Food Writer Says

Adding crème fraîche to the mashed potato topping is the key to a richer and more luxurious shepherd's pie, according to food writer James Hastings.

The comforting dish, made from minced lamb and vegetable filling topped with mashed potatoes, is a favourite in many UK households. A homemade version is far superior to a ready-made supermarket pack and is easy to prepare.

Why Crème Fraîche Works

Writing on Food Republic, Hastings explained that while everyone has their own go-to dairy ingredient for creamy mashed potatoes, crème fraîche is the one that cannot be beaten. He noted that although the ingredient is similar to sour cream, there are significant differences.

He wrote: "Both are the result of using bacterial culture to thicken and flavour cream, but where sour cream starts with a base of light cream, crème fraîche uses heavy cream."

A Richer, More Luxurious Topping

Hastings said the higher fat content of crème fraîche gives it a richer and more luxurious quality, which is evident when used to make a shepherd's pie topping. He added that crème fraîche is also less tangy than sour cream, so it pairs better with the other flavours in the dish.

He concluded: "Plus, crème fraîche is less likely to curdle under high temperatures, so there's less risk of any culinary mishaps."
