Former Great British Bake Off contestant Briony May Williams has shared a savoury scone recipe that replaces eggs, butter and milk with a single ingredient: houmous. The video, posted on TikTok, has garnered over 39,700 views and more than 1,200 likes.

In the video, Williams demonstrates how houmous can substitute traditional wet ingredients. She says: 'Apparently you can make scones out of houmous. All you need is houmous... flavour of choice. This is just some classic. Some flour and some baking powder. Surely it can't be that easy?'

The dough requires only houmous, plain flour and baking powder. The naturally moist consistency of houmous eliminates the need for butter, milk or eggs, creating a straightforward and speedy dough.

Recipe and Method

To enhance flavour, Williams adds mixed herbs and smoked paprika. The ingredients are combined in a bowl to form a soft dough, then divided into four portions. The scones are brushed with milk alternative and topped with mixed seeds before baking.

Williams cooked her scones in an air fryer at 180°C for eight minutes, though a conventional oven at 200°C fan for ten minutes works equally well.

Ingredients: 160g houmous, 65g plain flour, 1 tsp baking powder, 2 tsp dried chives, 1 tsp smoked paprika, 1/2 tsp salt, 1 tbsp milk alternative, 2 tsp mixed seeds. Method: Combine all ingredients to form a soft dough. Divide into four, place on a baking tray, brush with milk and top with seeds. Bake at 200°C fan for 10 minutes or air fryer at 180°C for 8 minutes.
