Fried eggs can taste better by ditching the frying pan and baking them in the oven, according to one of Britain's top chefs. Will Murray, co-chef at Fallow in London, revealed the method his team uses during busy breakfast and brunch service.
The baking method
In a TikTok video from July, Murray explained that the restaurant does not fry its eggs. Instead, the chefs use a baking tray with wide moulds, similar to a Yorkshire pudding tin. A small amount of oil is added to each mould, then the eggs are cracked directly into the tray.
The eggs are baked for exactly two and a half minutes at 160C (320F). Murray noted that keeping a hint of moisture inside the oven helps, suggesting home cooks can use a small pan of water.
Consistent results
Once out of the oven, salt and pepper are added to taste. Murray described the outcome as "absolutely perfectly fried eggs. Really consistent every time."
The cooking experts at Simply Recipes shared the same view. Sarah Epperson said: "Say hello to the easiest way to make fried eggs for a crowd. In fact, this sheet pan technique for frying eggs might just be the best thing to happen to breakfast since oven baked bacon."
