Simple ingredients, quick method

The recipe calls for two garlic cloves, three tablespoons of olive oil, six tomatoes, salt and pepper, and basil. The nonna explains: "I'm making a quick pasta with six tomatoes. It's very easy."

Begin by frying the garlic cloves in the olive oil until golden, then add the sliced tomatoes and cook for five minutes until they have slightly reduced. Season with salt and pepper, and for those who want some heat, add fresh chilli with the tomatoes.

Finishing touches

Continue stirring and crushing the tomatoes until they become a "beautiful sauce." The nonna notes: "This is a quick sauce for when you don't have time. It's not a passata, that's different, they taste completely different."

Add basil for a herby note, a splash of water to loosen the sauce, and if serving immediately, start boiling the spaghetti. Leave the sauce simmering for about 10 minutes until the pasta is al dente, then combine and toss together. If the dish seems dry, add a little pasta water until the desired consistency is reached. Serve with cheese on top.
