Stassi Schroeder's 600-Calorie Diet for SI Swimsuit Show

Vanderpump Rules veteran Stassi Schroeder posed in a bright orange bikini for the Sports Illustrated Swimsuit Show in Miami over the weekend. And now the Daily Mail has learned that the 37-year-old reality TV star dieted for months to look her very best as she joined Bethenny Frankel and Molly Sims on the catwalk at the W South Beach.

'Stassi really wanted to look incredible for the show so went on a massive diet,' a source shared. 'She skipped breakfast, had only a salad for lunch and then did not touch a carb after 5 pm, so she was having only about 600 calories a day,' added the friend. 'The weight just melted off her body, but that kind of diet is very hard to do because the cravings are insane, Stassi said. It's not easy for her to diet that hardcore, but the results are amazing and she felt great about herself.'

In the past, Schroeder has said on her podcast she does intermittent fasting to stay slender. She has also shared that she wakes up, has the energy drink Celsius, and skips breakfast, which she has admitted she doesn't really like that much anyhow. For lunch, she loves Chinese Chicken Salad, which includes chicken, lettuce, carrot slices, ginger and almonds. Then before 6 pm she has a snack to make sure she does not go to bed hungry. She also drinks a lot of water, she said on her podcast, and may have a little wine.

Functional nutritionist Monica Partier told the Daily Mail that intermittent fasting improves metabolic flexibility, stabilizes blood sugar and promotes cellular repair. 'Intermittent fasting involves alternating cycles of eating and fasting. This method allows you to experience numerous health benefits, including improved metabolic health,' Partier said. 'There are many methods of intermittent fast. One of the most popular is the 16/8 Method where you fast for 16 hours and then eat within an eight-hour window.'

Then there is the 5:2 Diet. Partier said, 'You consume a normal diet for five days but then you have very few calories, like about 600 a day for two non-consecutive days.' Also popular is the Eat-Stop-Eat Diet. 'This one is challenging because you have to fast for 24 hours once a week.' Then there is the much more flexible Alternate Day Fasting Diet. 'That allows you to eat normally for a few says then fast for a day, then do it all over again,' said the nutritionist. 'Sometimes people pick two days a week to fast, like a Tuesday and a Friday, to stay on schedule.'

Schroeder has two children - Hartford and Messer - with her husband Beau Clark. She has said in the past she would like more kids even if they are expensive. In 2023 she told Us Weekly: 'It is my fantasy to have a s*** ton of children, a lot of them. But children are really expensive. I'm discovering as life goes on - they're very expensive and I feel like they're the most time-consuming thing in the entire world.'

Despite this, the former model and waitress insisted she won't be rushing into any big decisions. She said: 'When I think about what I want my children's lives to be like, I want to be able to devote so much attention to each of them and give them as much as possible. I'm like, 'If I had a third, how would I give that one as much attention as these other two?' So at this point, I feel like two is a great number for me, but never say never because I might wake up one day and decide today's the day. You never know.'

Meanwhile, Schroeder previously suggested that pregnancy saved her from turning to alcohol and drugs after her firing from Vanderpump Rules. The reality star was axed from the show amid accusations of racism and Stassi admitted that her pregnancy news came at the perfect time for her. She said: 'I think [it] made me so much better to be pregnant while I was going through a hard time. If I wasn't pregnant, I probably would have just like … gone to alcoholism, Xanax. I would have lashed out, dark passenger-ed. And I think our baby 100 percent saved me.'

Schroeder was on Vanderpump Rules for eight seasons. She has also appeared on Queen Bees, The Amazing Race, The Real Housewives Of Beverly Hills, Summer House, Stassi Says and Vanderpump Villa. In November 2025, she was announced as the host for The Secret Lives of Mormon Wives season three reunion. She was also in the 2016 film Sharknado: The 4th Awakens with Tara Reid and Ian Ziering.
