King Charles has reportedly followed an anti-inflammatory diet for years, with former royal chefs revealing his preference for nutrient-rich foods that combat inflammation and promote longevity. The monarch's dietary choices, from wild mushrooms to oily fish and green tea, offer insights into healthier ageing.

Wild mushrooms are a particular obsession for the King, according to Queen Camilla's son Tom Parker-Bowles in his book Cooking and the Crown. Former royal chef Darren McGrady noted that Charles would take chefs foraging on his estates for the finest ingredients, especially porcini mushrooms, which are rich in the antioxidant ergothioneine.

Oily fish such as salmon and mackerel, abundant in omega-3 fatty acids, are also favoured by the King. These fats are known for reducing inflammation and supporting heart health, brain function, and joint mobility. However, Charles told the BBC he avoids meat and fish two days a week and dairy one day a week.

Green tea is another staple, preferred over coffee for its polyphenols like EGCG, which reduce inflammation and boost metabolism. The King has strict brewing rules: loose tea in a teapot, with water heated to 70°C for green tea and 100°C for black tea, measured with a thermometer.
