A chef has shared a simple technique that helps chicken stay extra juicy and moist when cooked. The method uses a common store cupboard ingredient: baking soda.

The chef-approved secret ingredient

Chef Charles Kim, also known as Chef Fatty on TikTok, explained in a July video that baking soda is a secret ingredient chefs use for chicken. He said: “Chefs use this secret ingredient for chicken that you need to know. Baking soda.”

Baking soda is often used for cleaning, but it is also versatile in cooking. Its ability is not limited to baking alone.

How to make chicken juicier

When preparing chicken for the oven or grill, Charles recommends an extra step to keep the meat juicy and prevent it from drying out. The method involves making a brine with bicarbonate of soda.

The chef explained that brining chicken in baking soda raises the pH level to make it more alkaline, which helps the chicken absorb moisture. He said: “Brining your chicken in baking soda raises the pH, which helps your chicken absorb moisture, making it incredibly juicy.”

Step-by-step brining method

When cooking chicken with intense heat, start by brining the chicken in a large tub of water. For every quart of water (approximately 945ml), add a quarter cup of salt and a teaspoon of baking soda.

Before adding the chicken, poke holes in the flesh with a fork. Submerge the chicken in the brine and place it in the fridge for 30 minutes to soak in all the brine.

Remove the chicken from the brine and pat it dry. If cooking in the oven or air fryer, place the chicken on a wire rack and cook at 425°F (approximately 220°C) until the centre temperature reaches 175°F (approximately 80°C). Charles recommends broiling the chicken for two to five minutes for perfectly crispy skin.

For grilling on a two-zone barbecue, preheat the barbecue to 400°F (approximately 205°C). Cook the chicken on the cool side of the grill until the centre temperature reaches 165°F (approximately 75°C), then transfer to the hot side until it reaches 175°F (approximately 80°C).
