Chef Reveals Top Reasons Food Sticks to Pan

Chef Justin Chapple has pinpointed the three primary reasons why food sticks to pans during cooking, all of which are avoidable. He says the most common mistake is attempting to flip food too soon.

Chapple explained that food will "release on its own" when it is ready to be flipped. "If it's resisting, give it another minute because it probably isn't ready yet," he advised.

Preheating the Pan Correctly

Another key factor is improper preheating. Chapple noted that a pan must be preheated enough so it is evenly hot. "You don't want it too hot and you don't want it too cold," he said. The fat used should "shimmer rather than smoke" – if it smokes, the pan is too hot and needs cooling.

Managing Heat Levels

Chapple also pointed out that having the heat too high causes food to burn before it can be flipped. This can damage non-stick pans and make them useless. He recommended reducing the heat when preheating and cooking: "While your food may take a little bit longer to cook, you're gonna have so much more control."
