A professional chef has shared the "main reason" your food sticks to the pan while cooking. Justin Chapple says you don’t need to replace your cookware; you need to change your technique.
Flipping Your Food Too Soon
Chapple says the "most common mistake" is trying to flip food too early. Food will "release on its own" when it is ready. "If it's resisting, give it another minute because it probably isn't ready yet," he advised.
Wrong Preheating Method
Incorrectly preheating the pan is another issue. You "don't want it too hot and you don't want it too cold." The fat you use should "shimmer rather than smoke." Smoking means the pan is too hot and should be taken off the heat immediately.
Heat Too High
Putting the heat up too high burns food before you can flip it. Chapple says this can also ruin non-stick pans. He recommends reducing the heat during preheating and cooking: "while your food may take a little bit longer to cook, you're gonna have so much more control."
