Ingredients and method
To make the soup, prepare two carrots by slicing them into half moons, dice four celery sticks finely and chop one brown onion into chunks. Alongside the vegetables, you'll need a tablespoon of garlic, five cups of vegetable stock, a cup of red lentils, a tin of four bean mix and 400g of roast chicken.
Sarah sautéed the onion in avocado oil before incorporating the garlic and vegetables, allowing the mixture to simmer for two minutes. She then poured in five cups of vegetable stock and brought it to the boil. Once bubbling, she introduced a cup of red lentils, the beans and the cooked chicken, leaving everything to cook for 10 minutes.
