Supermarket giant Tesco is set to introduce a striking new vegetable to its shelves, a direct response to a remarkable consumer shift towards brightly-coloured produce.

The move is driven by a significant surge in demand, which the retailer links to a growing public awareness of the 'eat the rainbow' health advice promoted by nutritionists.

The Rainbow on the Rise

Specific colourful vegetables have seen unprecedented growth in popularity this autumn. According to Tesco's data, sales of rainbow carrots and pink onions have skyrocketed by 100 per cent.

Similarly, demand for rainbow chard has increased by an impressive 70 per cent. This clear consumer trend has prompted the supermarket to act, with red kale scheduled to arrive in stores in the coming weeks.

Suppliers Scaling Up

To keep pace with this burgeoning demand, key suppliers are expanding their operations. Leading agricultural firms A H Worth and TH Clements, based in Lincolnshire, are significantly increasing their cultivation of these vibrant vegetable varieties.

This ensures a consistent supply chain can meet the needs of shoppers across the country who are eager to add more colour to their plates.

The Nutritionist's View

Tesco's company nutritionist, Natasha Maynard, has emphasised the science behind the trend. She explains that consuming a diverse range of coloured fruits and vegetables is crucial for good health.

"Eating the rainbow ensures you get a wide variety of essential vitamins, minerals, and antioxidants," Maynard stated. "Each colour represents different phytonutrients, all of which contribute to maintaining a healthy body."
