Ingredients for Four People
- Two large skinless, boneless chicken breasts
- Two tsp dried mustard powder
- One tbsp freshly chopped parsley
- One tbsp freshly chopped dill
- One to two tbsp sunflower oil
Tzatziki Ingredients
- 200g Greek yoghurt
- One garlic clove, finely grated
- Half a cucumber, deseeded and coarsely grated
- Three tbsp freshly chopped mint
Method
Place the chicken breasts onto a chopping board. Slice them in two, horizontally through the middle. Lay a piece of baking paper over the chicken breasts and hit with a rolling pin until it is thin. Remove the baking paper and sprinkle with mustard powder, parsley and dill. Season with salt and freshly ground black pepper. Drizzle over the oil.
Heat a frying pan until very hot. Add the chicken breasts and fry for two minutes on each side until golden brown and cooked through. Set aside to rest for a few minutes. Make the tzatziki by mixing the yoghurt, garlic, cucumber and mint in a bowl. Season with salt and freshly ground black pepper.
Serve the chicken alongside the dip. You can add a salad, rice or new potatoes alongside. Any leftover tzatziki is great on toast or in salads, according to the Happy Foodie who shared the recipe.
