Jacket potatoes are a beloved midweek dinner staple, often packed with a variety of toppings to suit different tastes. However, even classics like tuna jacket potatoes can sometimes become monotonous, with the tuna mixture tasting bland or cooling down faster than the potato itself. This week, I decided to revitalise my usual approach after encountering a viral recipe on social media that promised a game-changing twist.
The Viral Inspiration Behind the Traybake Technique
Traditionally, I would prepare jacket potatoes by microwaving them for 10 minutes, followed by baking in the oven for approximately 45 minutes. The tuna mayo topping would then be added separately once the potatoes were fully cooked. This new method, however, transforms the entire dish into a cohesive traybake, enhancing both texture and flavour significantly.
By cooking the potatoes as usual and then layering the tuna mixture in a deep oven dish, covering it with cheese, and grilling for 15 minutes, the results were astonishingly superior. For instance, I opted to microwave the potatoes initially and omitted the mature cheese spread. Despite these modifications, the dish remained exceptionally cheesy and delicious, proving the versatility of this innovative approach.
Ingredients for the Ultimate Tuna Jacket Potato Bake
- Four large baking potatoes
- One red pepper, finely chopped
- Four spring onions, finely chopped
- 280g garlic and herb soft cheese
- 70g mature cheese spread
- Two tins of tuna
- 80g tin sweetcorn, drained
- 50ml milk
- 50g cheddar cheese, grated, plus 70g extra for the topping
- Butter for potatoes
- Handful of chives, chopped
- Salt and ground pepper to taste
Step-by-Step Method for Perfect Results
- Preheat the oven to 200°C Fan.
- If using a microwave, pierce the potatoes and cook for 10 minutes. Then, place them in a baking dish with enough room to be snug, drizzle with oil and salt, and bake for around 45 minutes (or an hour if not microwaved).
- Heat oil in a pan, add the red pepper and spring onions, and fry on medium heat until soft. Set aside.
- In a mixing bowl, combine the soft cheese, mature cheese spread, drained tuna, sweetcorn, milk, peppers, onion, and grated cheddar. Season with salt and pepper, stirring thoroughly.
- Once the potatoes are cooked, make a cross in the top and squeeze the sides. Add butter before topping with the tuna mixture, ensuring it covers all sides of the dish.
- Sprinkle additional grated cheese on top and grill until melted and warmed through, which typically takes about 15 minutes.
- Garnish with a handful of chives and serve immediately.
