Bananas are a great snack when you need energy, but if you don't eat them quickly enough, they go mushy. A perfect way to use overripe bananas is to bake them into banana bread.

Baker, recipe developer, and TikTok creator Jane Dunn, known as Jane's Patisserie, shared her take on the classic bake. She includes soured cream to make the banana bread moist and adds dark chocolate chips for a bitter-sweet kick. In the video's caption, she writes: "A lovely moist banana bread studded with chocolate chips, ideal for using up any bananas that are on the turn! The soured cream is the perfect addition for creating a gorgeous texture."
Why Soured Cream Works
Jane explains on her website: "I used soured cream as I found it baked best with it – and four large ripe bananas worked best for me. Banana bread doesn't rise that much, so it will look like a lot of mix, but trust me, it works." She prefers dark chocolate because she loves its flavor.

Ingredients
- Four ripe bananas (plus one for the top)
- 125g unsalted butter
- 150g light brown sugar
- 250g self-raising flour
- One tsp baking powder
- 1/2 tsp ground cinnamon
- Three medium eggs
- 75g soured cream
- One tsp vanilla extract
- 150g chocolate chips
Method
- Preheat the oven to 180°C (160°C fan) and line a 2lb loaf tin.
- Mash the bananas, setting aside one for decoration.
- In a new bowl, beat the butter and sugar. Add the eggs, banana, soured cream, and vanilla, and beat again.
- Add the flour, baking powder, and cinnamon, and beat again. Fold in the chocolate chips, then pour into the tin.
- Optionally, place a banana on top for decoration.
- Bake for 60 to 70 minutes. After 30 minutes, cover lightly with foil to prevent excessive browning. Once baked, leave to cool fully and enjoy.
